Chicken Feet/Ji Jiao Dimsum Recipe (Resep Dimsum Ceker Ayam)

Chicken Feet/Ji Jiao Dimsum is a food where a part of the chicken is eaten in Asia countries including China. Most of the edible tissue on the feet consists of skin and tendons, with no muscle. This gives the feet a distinct texture different from the rest of the chicken’s meat. The process of making this dimsum is the chicken feet are mixed with other ingredients and steamed for certain time. This is to make that the chicken feet softer and the ingredients perfectly absorbed.  The taste is absolutely delicious :)

Dimsum Ceker Ayam adalah makanan dimana bagian dari ayam yang sering dimakan di negara Asia termasuk China. Banyak dari lapisan kaki ayam ini terdiri dari kulit dan urat daging, tidak mengandung otot. Ini memberikan tekstur yang berbeda dari bagian ayam lainnya. Proses pembuatan dimsum ini yaitu kaki ayam dicampur dengan bahan-bahan lainnya dan di uap dalam waktu tertentu. Hal ini bertujuan agar kaki ayam lebih lembut dan bahan-bahan diserap dengan sempurna. Rasanya sangat nikmat :)

1) BOILING CHICKEN/REBUS AYAM:
-Chicken feet/ceker ayam (15 pcs)
-Water/air (1,5 L)
-Lemon/jeruk (1 pc)

2) MAIN INGREDIENTS/BAHAN UTAMA:
-Chili oil/minyak cabe (2 tbsp)
-Chives/daun bawang (1 pc)
-Ginger liquid/air jahe (2 tbsp)
-Shallot/bawang merah (5 pcs)
-Chili sauce/saus cabe (1,5 tbsp)
-Sweet soya sauce/kecap manis (4 tbsp)
-Worcestershire sauce/kecap ingrris (1,5 tbsp)
-Water/air (200 ml)
-Oyster sauce/saus tiram (1,5 tbsp)
-Salty soya sauce/kecap asin (1 tbsp)
-Chicken broth/penyedap (1/2 bar)
-Maizena flour/tepung maizena (2 tbsp)
-Percely/peterseli
-Sesame seed/biji wijen
